Ms. Shirley's Muffins

A Healthy Yet Tasty Snack

Limiting candy and sugary snacks is always difficult during this time of year.  Fortunately, this recipe is both delicious and nutritious.  We've been addicted to Ms. Shirley's delicious muffins from the very first time we took a bite.  And best of all, there's no guilt in having 2 or (ahem) 6....

Ms. Shirley's Muffins

You'll Need:

A:
  • 4 very ripe bananas
  • 1 shredded zucchini
  • 1/2 cup pumpkin puree (optional)
  • 1/2 cup Greek yogurt
  • 1 egg
  • 1/2 cup brown sugar
  • A dash of cinnamon
  • 1 tsp. Pure Vanilla extract
B:
  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1 cup almond meal (we use Trader Joe's)
  • 1/2 cup flax seed meal (optional)
  • 1 scoop of protein powder (we use Trader Joe's)  (optional)
  • 1 tsp. Salt
  • 1 tsp. Baking soda
  • Chocolate chips

Mash together ingredients from A.

Mix in ingredients from B. You can mix in 1/2 cup of chocolate chips in the batter or just add 1 in the middle of each muffin.

Bake at 350 degrees for 13 minutes for mini muffins.

Makes about 5 dozen mini muffins.
