Macaroni Menu: Save Those Ripe Bananas for Delicious Homemade Banana Bread

Do some of your bananas look like this after a few days on the kitchen counter?






If so, don't throw them out! They are the perfect ingredient for the best and easiest banana bread recipe. I have been using this banana bread recipe for over 20 years, since my aunt shared it with me after tasting her own homemade banana bread. Hers had nuts and was enough for two loaves of bread so I modified it based on what we had in the house. It is so easy to make, using ingredients you probably already have in the house - even overly ripe bananas. The riper the bananas, the sweeter the bread without adding additional sugar. The recipe includes chopped pecans, which you can leave out. You can also substitute the pecans for chocolate chips if your bananas are not overly ripe and you want the bread to be sweeter without adding more sugar.

INGREDIENTS

2 ripe bananas, mashed

1/2 cup butter, softened

1 1/2 cups sugar

2 eggs

1 1/2 cups flour

1 cup milk (or dairy-free substitute)

1 teaspoon baking soda

1 teaspoon vanilla extract

pinch of salt

1 cup chopped pecans (optional)


👩🏻‍🍳 INSTRUCTIONS

Preheat the oven to 350 degrees.  Grease a 9" x 5" loaf pan with a little oil and lightly dust with flour to prevent bread from sticking to the pan.

In a large mixing bowl, add the ingredients above in the same order they are listed. 

Bake for 55 minutes to 1 hour (varies depending on oven). Bread is ready when the outer crust is a golden brown and a toothpick inserted in the middle of the pan comes out clean.
